ANALISIS KUALITATIF KANDUNGAN BORAKS PADA BAKSO TUSUK DI WILAYAH KABUPATEN KULON PROGO PROVINSI DAERAH ISTIMEWA YOGYAKARTA
Abstract
Borax is probihited from use in food, but apparently there were many food products such yellow noodles, meatballs, and lontong. Satai meatballs was one of favorite foods for people which was usually added by using dangerous substances. The purpose of this research was to know whether or not there were borax substances and how much borax was used in satai meatballs especially in Kulon Progo regency, Province of Daerah Istimewa Yogyakarta. This research used laboratory descriptive method. To identify the substances of borax, this research used qualitative analysis, where the qualitative analysis used turmeric test. The sample was taken from satai meatball seller who were in Kulon Progo Regency, every region was taken 2 seller. Cluster sampling was used as the sampling method.
The result showed that all samples of satai meatballs in Kulon Progo, Province of Daerah Istimewa Yogyakarta, was positive contains borax.
